World’s Best Lowfat Granola


I am a life-long die-hard granola eater always forced to eat it in strict moderation, unless of course I chose to eat the lowfat semi-chewy, treebark- tasting version. I’ve been tweaking recipes and decided to experiment by first leaving out the mass quantities of oil in most recipes. This is what I came up with and I love it.
P.S. I always make a big batch and take it with me when I travel.

World’s Best Lowfat Granola
Mix ingredients below together in a small saucepan and heat just before boiling (about 5 minutes).

1 T butter
¼ c Maple syrup
1/8 c Honey
1 t vanilla extract
2 t almond extract
2 t cinnamon
½ t nutmeg

In a medium bowl combine:

3 c Old Fashioned Oats
½ Wheat Germ
½- 1 t Sea Salt

Pour hot saucepan mixture over Oat mixture and stir til moistened. Add 1 or 2 T of water if necessary.

Bake in preheated oven at 325 degrees until golden brown, about 20 minutes. Stir halfway through baking (Make sure its golden brown, otherwise it will be chewy)
Add hot baked granola back to mixing bowl and add:
½ c dried cherries (my preference) or raisins
¼ c pecan pieces or slivered almonds (can omit to save even more calories)
½ c rice krispies
Stir well and let cool completely before storing in an airtight container.
